Low Calorie - Single Serving Pumpkin Mug Cake!
Fall is finally here! Meaning it is the season of apple and pumpkin spice everything!
Many of these treats can be extremely high in calories, fats and sugars so here is a little treat that will cut your cravings and make you feel included in the fall festivities while still staying on track! Best part is that it takes less than 10 minutes to make and is under 125 calories!
Ingredients
- 3 tbsp (23g) white whole wheat flour or gluten-free flour
- ⅜ tsp powdered stevia
- ⅛ tsp baking powder
- 1/16 tsp fine salt
- ¼ tsp unsalted butter or coconut oil, melted
- 1 tbsp (15g) pumpkin purée
- 1 ½ tbsp (23mL) unsweetened almond milk or milk of choice
- ¼ tsp vanilla extract
- 18 drops of Stevia, vanilla flavored is best
- Non-stick cooking spray
Instructions
- First lightly coat a 1-cup ramekin or mug with nonstick cooking spray.
- Whisk together the flour, powdered stevia, baking powder, and salt in a small bowl.
- In a separate bowl, stir together the melted butter, pumpkin purée, and milk.
- Stir in the vanilla and Stevia drops
- Gradually mix in the flour mixture, about 1 tablespoon at a time, until just combined.
- Spread the batter into the prepared ramekin.
- Microwave for 2 minutes 30 seconds.
- Let the mug cake cool for at least 2 minutes so that it is cooked through.
- Enjoy!
